Bites on a Budget: Valentine’s Day cupcakes

Valentine’s Day is a day to honor love and shower your loved ones with gifts from the heart and there is no better way to say “Be my Valentine” than with something tasty to warm your heart on a chilly February evening.

Chocolate Cupcakes

1 ¾ cups unsifted all-purpose flour

2 cups granulated sugar

¾ cup unsweetened cocoa powder

1 ½ tsp. baking soda

1 ½ tsp. baking powder

1 tsp. salt

2 eggs

1 cup milk

½ cup vegetable oil

2 tsp. vanilla

1 cup boiling water

Combine all the dry ingredients in a large mixing bowl. Add eggs, milk, oil and vanilla. Beat 2 minutes at medium speed until the mixture is well blended. Stir in the boiling water. Mix well until water is incorporated. The batter will be thin. Pour batter halfway full into greased and floured heart-shape muffin tins. Bake at 350 degrees for about 8 to 10 minutes.  Cool and then frost with your favorite frosting and decorate with festive sprinkles.

Makes about 30 small cupcakes
