On this week’s Dinner Thyme, we’re going to show you three recipes you can make with the ingredients available at the Associated Student’s farmer’s market.
It’s now easier to buy fresh produce and ingredients. What used to require a drive or long walk to the nearest grocery store is now just a short walk from your class.
Each recipe has three key ingredients that can be found on campus, as well as things that should be readily available in your kitchen.
They’re all relatively cheap, healthier than picking up a hamburger at the fast food place across the street, and easy to make for those days you don’t have enough time to prepare a meal.
This might be the easiest and cheapest of the group. Plus, there are different ways to customize this to fit everyone’s individual taste. I personally prefer olive oil and a bit of salt on my salads, but any dressing will do.
What to Do:
1.) Chop up the lettuce.
2.) Peel and slice the carrots.
3.) Find favorite dressing.
Mix all of the ingredients together.
This is really fast to prepare, and packs a lot of flavor in so few ingredients. Within a few minutes you have lunch ready to go, or you can make it in the morning before you leave and warm it up on campus.
What to do:
1.) In a medium pan, drizzle some olive oil along the bottom.
2.) Turn the heat on to medium.
3.) Peel the carrots.
4.) Chop up all the ingredients.
5.) Add them into the pan.
6.) Sprinkle some salt and pepper in (along with any other spices you enjoy).
7.) Wait till they get roasted on the outside.
This recipe is pretty easy, and perfect for the approaching spring weather. Adding any vegetable of your choice can also help customize this choice.
What to Do:
1.) Thinly peel the cucumber.
2.) Chop up the carrots, the rest of the cucumber and asparagus.
3.) Place all three on one side of the cucumber.
4.) Add a dollop of sauce of your choice (suggestions include ranch, guacamole, goat cheese, etc.).
5.) Roll up all the ingredients like a sushi roll.
