Black Bean Soup
This soup is another recipe from Vegan Yum Yum. I love this soup for a quick fix. It’s a one-pot meal—perfect for a college budget and for when you’re in a pinch.
Black beans have the added benefits of being rich in antioxidants that benefit not only the health of your skin but can help reduce your risk of cancer. Black beans are also high in fiber which will keep you fuller longer!
Ingredients:
1-2 T olive oil
1 carrot, chopped
2 stalks celery, chopped
¼ c red pepper, diced
½ t thyme
¼ t cumin
black pepper
1 can black beans
1 c tomatoes, diced
½ t salt
1 T soy sauce
1 c water
Saute vegetables until translucent in olive oil. Add canned beans and tomatoes, spices and water, bring to a boil. Turn down heat and cover, simmer for 30 minutes.
