Banana bread made easy

Easy, From-Scratch Banana Bread

So, I had a couple bananas that were turning brown this past week so I decided to try my hand at making some banana bread. I had never made any type of bread, yeasty or otherwise. So, I was truthfully a bit nervous. In the end it came out beautifully. Next time I would make sure that all of the bananas used are completely browned to ensure max-banana-goodness.

 

Ingredients:

1 3/4 c sifted unbleached flour

2 1/4 tsp baking powder

1/2 tsp salt

1/2 tsp real vanilla extract (not imitation)

1/3 c butter

2/3 c sugar

3/4 T orange zest (or lemon zest)

1 or 2 eggs (I had jumbo eggs, so I used one. If you have small eggs, use two.)

1-3 ripe (very brown) bananas

spices to taste- 1/8 tsp cardamom, 1/8 tsp ground clove, 1/2 tsp cinnamon, allspice and nutmeg, ginger

 

Step 1

Preheat oven to 350 degrees F

Cream butter, sugar, vanilla, and zest in a bowl.

Beat in the bananas and eggs, but not too much so the mixture starts to separate.

Step 2

Add dry ingredients.

Beat the combined batter until creamy.

Add any additional ingredients you may want (nuts, dried fruits, etc.)

Step 3

Grease bread pan with butter.

Place pan in over and bake for 45minutes to an hour. Bread is done when the top is golden and a knife comes out cleanly when tested.
